A kind of tomato-based stew with chicken, potatoes, and veggies.

Chicken Apretada
Ingredients
- 2 lbs chicken
- 2 cloves garlic
- 1/2 cup onion
- 2 Filipino hotdogs
- 1 can tomato paste
- 2 cups chicken broth
- 2 bay leaves
- 1 potato
- 1 cup peas and carrots (frozen)
- 1/4 cup red bell pepper
- 1 tsp sugar
- 2 tbs patis (fish sauce)
Instructions
- Saute garlic and onions in a pot. Add in your hotdogs (optional).
- Add the chicken and cook until brown. Usually about 5 minutes.
- Add chicken broth, tomato paste, sugar, patis (fish sauce), and bay leaf to the pot. Simmer for 35-40 minutes.
- Add potato and carrots (if not using frozen carrot). Simmer until potato is cooked.
- Add bell pepper, and peas/carrots (frozen).
- Add salt and pepper to taste.
