These are our go-to for the weekends when I have a bit more time to make breakfast for my family. Since my son can’t have wheat, egg, or soy, I had to come up with a home made waffle mix that is safe for him to eat and also tastes good.

I love eating these plain, but you can also add homemade jam, butter, syrup or any other toppings that you like. You won’t even miss regular waffles after trying these. I swear, gluten-free waffles taste better to me now!

I tried all kinds of gluten-free waffle box mixes, and most of them are pretty decent. However, they can be more expensive than making it yourself, and not that much more convenient. I love that this recipe is easy and also saves us money!

My one year old loves these waffles, especially with the homemade berry jam. If you’re making them for an infant or toddler, one tip I have is to cook them just until you are able to open the waffle iron with it forming one piece. Basically, once it’s solid and not a liquid anymore I would take it off the heat so that it stays soft.

  • Waffle maker

Ingredients

  • 1 cup gluten-free flour mix I use Bob's Red Mill 1-to-1, but any gluten-free flour mix would work
  • 1 tbsp baking powder
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 1 cup milk I use lactose-free milk (Lactaid) but you can use any milk that works for you
  • 2 tbsp melted coconut oil
  • 1 tbsp ground flax seed This recipe is egg free, so we'll be making a flax egg. You could use a regular egg if you want.

Instructions

  • Start by making your flax egg. Mix 1 tbsp ground flax seed with 3 tbsp hot water. Wait about 10 minutes for it to get to "egg-like" texture.
  • While the flax egg is forming, mix together the other ingredients in a medium-sized bowl.
  • Add the flax egg to the mixture.
  • Spray your waffle maker with coconut oil cooking spray. A large scoop (a little over 1/2 cup) will make one waffle.
